Have a Bite of...

Easy Beef Stroganoff
Yum!
It isn't exactly pretty (or more accurately, I don't have the skills to make it pretty), but it's pretty delicious! At the almost one year mark, we are branching out on solid foods for Jr. now that he is consistently interested in eating. This was the first real food he would happily eat, and it has been in our daily rotation for the past month! The two things I love about this dish are that it is a one-pot meal, and that it makes a lovely sauce without needing flour.

Easy Beef Stroganoff
adapted from Taste and Tell

2 Tbs olive oil, divided
16 oz mushrooms, sliced
salt and pepper
1 small onion, chopped
1.5 - 2 Tbs garlic paste
1 lb ground beef
2 Tbs paprika
2 Tbs beef base
1 cup hot water
4 cups organic beef broth
12 oz gluten free rotini
1/2 cup sour cream

In large skillet, heat 1 Tbs olive oil. Add the sliced mushrooms and sauté, flipping/stirring the mushrooms after 2 minutes, until just starting to brown. Place mushrooms in bowl, season with salt and pepper, and set aside.

Heat remaining olive oil, add the chopped onion and sauté until translucent. Add garlic paste and stir to combine. Add ground beef and cook until browned, breaking up chunks as you go.

Add paprika, beef base, and hot water. Stir until combined, then add beef broth and rotini. Bring to a boil, cover the pan, reduce heat to low and simmer for 15 minutes.

Remove pan from heat, add the sour cream, and stir until incorporated. Add the cooked mushrooms, stir, and serve! (This makes approximately six dinner servings. I usually get four lunches for myself and eight meals for Jr from one pot.)

This is Jr's favorite food* and he usually powers through it for two meals a day. Now that we've established his taste for it, I've taken to adding various steamed vegetables* just prior to serving since he doesn't like to eat them plain. So far we've had relatively good luck with green beans, peas, carrots, and corn.
*always cut into age appropriate, bite-sized pieces

And Suddenly It Was May...

I'm not really sure what happened to April.

A Little Slice of Heaven

You guys! No lie, I just had the best night of sleep I've had in at least a month.*
*Full disclosure: it still involved being up three times during the night, but it was amazing regardless.

And to top it off, Jr. SLEPT IN. So not only was I well rested and in a fabulous mood, but he was as well. And THAT hasn't happened in a while since we've been going through a reflux-flare-up-growth-spurt-and-mobility-leap thing.

AND THEN he ate really well and napped for almost an hour, which meant I had time to pump, feed the pets, make an iced coffee, shower, put makeup on, and almost finish my hair before he was up again. So we were out the door for grocery shopping at 9:30am. 

After we got back I was able to prep dinner and put it in the crockpot, we both had breakfast (gluten free toast with avocado for me, Plum Organics and prune juice for him), the kitchen was wiped down, I did some vacuuming, and spent 15 minutes trying to find the sock that magically disappeared from Jr's foot while we were playing - all before his 11am nap.

After weeks of fussiness, this morning was a balm for my weary soul. Bonus: At 11:30am I had a sleeping baby, a humming washing machine, and few minutes to blog for the first time in a month.

Have A Bite Of...

Almost Homemade Spaghetti Sauce

Almost Homemade Spaghetti Sauce with Spiralized Squash

Sometimes the only "productive" thing that gets done around here is comforting a very fussy baby. On those days dinner is something easy, like jarred spaghetti sauce. Me being me, however, means that I can't leave well enough alone!

Almost Homemade Spaghetti Sauce
a.k.a. Fancy Sauce
1 lb. ground beef
1 - 2 Tbs. garlic paste
2 shallots, diced
Optional: 1/4 cup of diced or shredded vegetables*
(*think carrots, celery, and/or zucchini)
1 jar spaghetti sauce
1 Tbs. oregano
1 Tbs. basil
1 Tbs. parsley
1/4 - 1/2 c. chicken broth
2 Tbs. milk/cream

In a large saucepan, brown the beef with shallots and garlic (plus vegetables, if desired). Add the spaghetti sauce, oregano, basil, and parsley (I use Litehouse herbs unless there are fresh ones on hand). Let everything simmer for about 20 minutes, adding 1/4 c. of chicken broth at a time if the sauce is getting too thick. 

Five minutes before serving, add the milk and let the sauce continue simmering. Serve over traditional, gluten free, or veggie noodles. Quick Tip: spiralized squash noodles can be prepped hours in advance so they're ready for a brief sauté as soon as the sauce is done.

The first time I modified the sauce Chris couldn't stop raving about it, and was shocked to discover its humble beginnings. Tweaking the sauce only takes a couple minutes and makes all the difference in turning a nondescript jar of sauce into something a little more special!
